Mango Phirni

Mango Phirni popularly known as Aam ka phirni in North India. My children love mangoes in any form. Mango phirni is very sweet, creamy in texture,rich sweet served in cups topped with almonds and pistachios.Let us see how to make this sweet dish.

Preparation time approx 45 minutes.

setting time approx 6 hours

Ingredients:

1 litre milk
1 to 11/2 cup sweet mango puree ( i used alphonso mango pulp)
3/4 cup sweetened  condense milk or 1/2 cup sugar according to your taste.
4 big tbsp basmati rice.soak for 2 hours
Pistachios and Almonds for decoration.

Optional

A pinch of saffron soaked in little milk

little cardamom powder

Method:

Grind the rice with milk or water coarsely keep aside
Boil the milk.
Let it reduce 3/4 of its quantity.

Add the basmati rice paste to milk. Mix well.
Keep on stirring  otherwise lumps may form.
Cook for 6 to 7 minutes.Rice should cook and become thick in consistency.

Add condensed milk. Or sugar.
If you need more sweeter phirni  add little more condensed milk or sugar

Mix well.
Cool it

At this stage we can add cardamom powder and saffron soaked in milk.

I have not added cardamom and saffron..
After cooling add  the mango puree or pulp. Mix the puree or pulp well with milk .

Keep the phirni  in  fridge for 5 to 6 hours to set.

Decorate with pistachio  and Almonds
