Pudina Shallot chutney

I thought of making side dish for my chila. Today I tried different method of pudina chutney for my chila. This chutney is a good side dish for idly,dosa, bread, parathas etc. This healthy chutney is very easy to make with few ingredients. If you want you can season it with mustard seeds, asafotedia, urad and channa daal. I have avoided the seasoning. I want to use less oil. Let us see how to make it.

Preparation time approx 10 to15 minutes.

Ingredients.

2 tbsp whole urad daal.

2 handful of oudina leaves.

1 handful of coriander leaves.

12 peeled shallots.

2 garlic pods.

3 green chillies.

1/4 cup grated fresh coconut

Very small size tamarind/ 1 tbsp lemon juice

Salt to taste.

1 tsp oil.

Method.

Heat the oil in a pan add urad daal fry till it turns red in color.

Take out and let it cool.

In the same pan add shallots,garlic and chillies. Fry this. Just shallots raw taste should go no need to change colour.

Now add cleaned, washed pudina and coriander leaves. Saute well. .

In a mixer grinder add this mixture. Add coconut, tamarind and salt. Grind well.

Add little water if it is thick. At the end add urad daal. Grind. Urad dall should be grainy. Not a paste. If you grind more taste will differ.

Optional.

Heat 1 tbsp oil. Add 1/2 tsp mustard seeds. Let it crackle add 1/ 2 tsp each urad and channa daal.let it turn brown add asafoetida. Pour this over chutney.

I have omitted this step due to health factors.
