Bhindi capsicum masala restaurant style.
Bhindi is a favourite at home with my children and my husband. Any dish with bhindi is a hit at home for me! This actually makes life much easier, cause you can make so many dishes with this veggie. Well, this particular dish I stumbled upon when I visited an Indian restaurant in Bahrain, it was a simple dish but the taste was yummy. It’s a very simple dish to make. I pretty much tried asking the waiter what is the dish made of- what the masalas are.
There was nothing special with it, except the combination of bhindi and capsicum. The blend of capsicum with it makes it better. I have used simple masalas to achieve the restaurant’s taste sans the makhan or ghee.
It’s a great comfort food at home especially with soft phulkas!
Ingredients
- 25 ladies finger
- 1 big or 2 small size capsicum
- 3 red tomatoes
- 2 medium size onions
- 1/2 tsp coriander powder
- 1 tsp or as per taste red chilly powder
- 1 small piece cinnamon
- 1 cardamom
- 3 clove
- 1 tsp ginger garlic paste
- 1/2 tsp turmeric powder
- 1 tsp kasturi methi
- Salt to taste
- Small bunch of coriander leaves
- 7 cashew nuts soaked in milk and paste or badam
- 3 tbsp oil
- 1 tsp jeera
- 1 tbsp coriander seeds dry fried and crushed
- Fresh cream optional
Method
Wash clean and wipe the ladies finger. It should be dry. Cut into pieces. Keep aside.
Cut the capsicum in to big pieces
Grind the cashew or badam with milk
Chop the onions fine.
Grate the tomatoes.
In a pan add 1 tsp oil fry the ladies finger with out changing color. Keep aside. Or deep fry.
Chop dhaniya leaves.
Heat a pan add oil
When it is hot add ,jeera, crushed coriander,cinnamon,Clove, cardamom. Saute for few seconds.
Now add finely chopped onion. Let it change the color. Add ginger garlic paste.
Now add tomatoes. Fry till the tomatoes become mushy. Add salt, turmeric, dhaniya powder,chilly powder.
Fry till the oil floats.
Add chopped dhaniya leaves and cashew or badam paste.
Saute well.
Add capsicum. Mix it well.
Add little water. Close it with a lid cook.When the cpasicum is cooked add fried bindi. . Mix it well.
Add little water and cook.
Switch off the stove and add crushed kasturi methi.
Add fresh cream and mix. ( optional)
Tips
I have not added cream instead I added full fat milk at the end. Mix it immediately .otherwise milk may split.
If you want gravy type curry add more water and milk.
